Home Ec.
I've talked about Mackenzie having a night each week that she's mostly responsible for the meal for quite a while now. The problem is that for now, until she learns and is able to really do it on her own, it's really a cooking lesson and not Mom getting a night off. However, keeping the big picture in mind...that eventually she'll get it and Mom WILL have a night off each week...we've begun the cooking lessons.
Calling it Home Ec. studies, I help her look at recipes, look at food we have in the house already, create a well balanced menu, make a list of needed ingredients, grocery shop, and prepare the meal. This is our third cooking lesson. I first chose Tuesdays, but have realized that with it being library day, piano lesson day, and grocery shopping day, it's too stressful to squeeze a cooking lesson in between the time we get back home and when hungry stomachs demand food. Next week I'm thinking we'll try Thursday.
The first week Mackenzie chose meatloaf, roasted red potatoes, and green beans. The second week she did cheese enchiladas, beans, and rice. Today she chose chicken pot pie and wanted them to be in individual bowls.
Here she learns the standing for a long time stirring gravy lesson...

Our delicious bowls of pot pie...

It was hard to only eat half...but leftovers will be delightful!

Our Move to Louisiana...a belated post
Well now that we've been here in Louisiana for over 3 months I decided to delay no more and post pictures of our move:
We had a great group of friends who showed up for pizza and packing (the moving truck). Like good hosts we delicately laid out the broken down cardboard boxes on the ground under the carport and served up the food. And it was so hot outside that the pizza never got cold! Wait, that really wasn't so great...

The poor guys who worked so hard in the humid head to help load up the truck were soaking wet and exhausted. We still are so appreciative of the help! What a blessing!

The kids rode in the moving truck with Brad and I followed in our stuffed (with all the extra last minute stuff that you realize you have and forgot to figure out just where to pack them for the move) car. They had a lot of fun playing the alphabet game from such a good vantage point! This one is as we drove across the Mississippi River, leaving the state that was our home for the last 4 years...

and entered Louisiana...

and only an hour and fifteen minutes after leaving Clinton pulled up to our new home in Delhi...
